CUISINE of ADANA

Due to influence of various civilizations, Adana and its vicinity have very rich cuisine. The specialities of the cuisine are bulgur, flour, meat, various spices, milk, yoğurt and cheese. Adana Kebap is very famous throughout the country and the world. This dish is served (or consumed) with lots of greenery (Aruga, parsley), salad of any sort (mostly green with tomatoes, cucumbers). Next to these, you can have Ayran or Şalgam Suyu (Turnip Juice).

Amongst many different local dishes, such as Dough Soup, Ring Soup, Süllüm (vegetable dish), Meat Balls with Garlic, Gypsy Kebap, Karakuş Sweet, following are few recipes:


Kömbe with Ground Meat or Spinach
4 kgs./8.8 pounds Flour
1 water-glass liquid oil (Preferably olive-oil)
1 sweet-spoon yeast
2 kgs./4.4 pounds spinach or 1 kgs./2.2 pounds ground meat
5 mid-size dry onions
2 soup-spoons tomato paste
Sessami Seeds
Salt and water to taste

Make a space in the middle of flour and make dough out of it adding salt, water and yeast. Leave it to stand for 1-2 hours. Divide the dough into 5 equal pieces. Oil a large round metal tray with a tea-glass of oil. Spread the dough pieces on the tray according to the size of the tray. The inner material made out of onion, spinach or ground meat and tomato paste is lain on each piece of dough. The cover this inner material with the same dough left over on the sides.

In another container, prepare sessami seed, 1 water-glass of flour and 1 water-glass of water. Smear the top of the 5 pieces of dough with inner material with this preperation. Then pour 1 water-glass of oil over these pieces and cut each of dough pieces into diamonds to size you like. Cook the diamonds in oven. Good Appetatite !
